This is a fairly new recipe to me, but has been requested by a few people. This is a great dessert that they serve at Applebee's. It looks like an innocent little cake and then you stick your fork in and ooey gooey deliciousness issues forth from the center. It's scrumptious and irresistible.
While this recipe is fairly new to me, it did bring back many painful (but yummy) memories of not being able to wait to eat and burning my tongue on something I won't be able to taste because of my impatience. Let this serve as a warning to you all...give it a minute to cool. You'll thank me. And now, without further ado...the recipe!
Molten Chocolate Cake
4 squares (ounces) semi-sweet chocolate
1/2 cup butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 Tbs. Flour
Melt together butter and chocolate. Mix in flour and sugar. Stir in eggs. Pour into four 3/4 cup souffle dishes and bake for 13-14 minutes at 425ยบ. Serve with whipped cream.
*Tips - If you stir the eggs into the chocolate before the sugar/flour, they'll curdle...so don't do it.
- For smaller cakes, divide batter into ten muffin tins and bake for 10 minutes.

Taco Soup
This first recipe comes from my great-aunt, Joan Day Brady. She's quite an amazing woman. Her husband died at a young age leaving her to raise her multitude of children. On a tight budget, she still managed to feed her kids and make mealtime fun. A few years ago she decided to write a book called "Daily Meal Planner" to help busy moms plan out meals throughout the week and even through the month. My sister did a lot of the editing on it for her and you can still buy it on amazon at the link below. This is a recipe from her that I love! It's really easy and great for a big crowd. Beware: you will have TONS of leftovers.

Taco Soup
1 pound ground beef
1 large onion (chopped)
2 cloves garlic (minced)
1 package taco or fajita seasoning
1 large can tomato juice
1 small can green chiles chopped
1 small can chopped tomatoes
1 small can light red kidney beans
1 small can dark red kidney beans
2 small cans of corn
Sour Cream
Fritos
Shredded Cheese
Brown the hamburger in a large pot until cooked through. Add onion and garlic and cook until onion becomes transparent. Add taco seasoning and all the canned ingredients. Cook over medium heat until hot, being careful not to scorch the bottom. Serve with sour cream, fritos, and shredded cheese.

The Purpose
My goal in posting this blog is to share recipes and the stories behind them. I've had many friends ask me for these recipes, and they may seem simple or mundane, but their stories can be hilarious, heartwarming, sad, and just plain silly. I hope you enjoy!
